Chef Paul finds joy in every bite people take of his carefully crafted dishes. Serving guests from Palm Beach to the Hamptons, he most cherishes the happiness that comes from their feedback.

Chef Paul's passion for food was ignited during childhood visits to his great grandmother's house on Sundays. These cherished memories and her treasured recipes inspired his journey from culinary school to becoming a chef.

His culinary journey is rooted in his love for Mexican cuisine, influenced by the diverse people he encountered during his upbringing. The rich, authentic flavors and cultural experiences became his culinary compass.

Chef Paul's career highlights include attending the prestigious Culinary Institute of America in Hyde Park and working at the renowned Breakers in Palm Beach. He's proud of his role in establishing Lucco Cucina & Bar as a beloved restaurant in the community. One memorable day in the Hamptons, while working at Doppio, a modern Italian restaurant, he even served Billy Joel during a slow weekday lunch!

The kitchen's pressure, the challenge of creating a perfect dish within a set timeframe, is where Chef Paul thrives.

When he's not in the kitchen, Chef Paul enjoys outdoor activities like fishing, hiking, snowboarding, camping, and kayaking. Acadia National Park in Maine is a special place for Chef Paul, where he watched the sunrise from cliffs above the breakers, savoring the salt and pine-scented air.

And if he had a catchphrase, it would be the wise words he borrowed from one of his favorite chefs in culinary school, Chef Xavier Leroux: "Take your time, but hurry up. You know what I mean?"
