I love cooking for other people because I love making people happy. Food has a way of bringing people together — and watching how someone reacts to a truly great bite is endlessly rewarding. The eyes-closed smile, the little fork shake, the happy dance in the chair — those moments are the reason I cook.
My food is all about contrast and intention. I love extremes: tender and crunchy, rich and fatty, light and airy. If it’s meant to be crispy, it should be the crispiest thing you’ve ever eaten. That balance — and that boldness — is what makes food exciting to me.
I grew up in Bellevue, Washington, spent several years in Beijing, and come from a half-Chinese family. I later married a Korean woman, and many of my fondest memories are tied directly to Asian flavors and shared meals. I cook a lot with those influences, often layering in Mediterranean elements — and yes, tacos will always have a place on my menu.
My path to becoming a chef wasn’t traditional. I dropped out of college, got a job at a ramen shop, and fell completely in love with restaurant life. That passion eventually led me to attend the Culinary Institute of America in Hyde Park, NY. From there, I went on to become Executive Chef of the 1915 Wine Cellar, where I created menus, ran a full charcuterie program, and executed everything from intimate dinners to large-scale wine-paired events.
Some of my favorite moments as a chef are the simplest ones — stepping out of the kitchen with a new idea and saying, “Try this.” Watching someone’s face light up, then talking through how it could be even better, is magic to me.
Cooking is how I take care of people. It’s the best way I’ve found to do that professionally, and I bring that mindset into every meal I make.
