Born and raised in New Jersey, Chef Thomas found his way into the culinary world after college when he decided to try restaurant cooking instead of joining his dad’s landscaping business. What started as an alternative plan quickly turned into a passion for the creativity, energy, and excitement of professional kitchens.
Thomas has a particular love for simple Italian food, where quality ingredients and letting flavors shine take center stage. He believes cooking is about more than just the food. It’s about bringing people together and creating experiences that stay with them long after the meal is over.
For Thomas, the kitchen is a place where all the senses come together in a rhythm of creativity, collaboration, and constant movement. He loves the energy and atmosphere of a busy kitchen, where every detail contributes to the final experience.
One of his proudest career highlights was helping launch Chitarra Pastaria, a pasta company focused on employing young adults on the autism spectrum. He has also had the opportunity to cook for some recognizable faces, including Leonardo DiCaprio, Timothée Chalamet, Sydney Sweeney, and Dakota Johnson.
Thomas’s honeymoon took him to Dill in Reykjavík, a Michelin-starred restaurant that became one of his most memorable culinary experiences and his favorite restaurant in the world. Iceland remains his favorite destination, inspiring his appreciation for thoughtful food and unforgettable dining experiences.
When he’s not in the kitchen, Thomas enjoys skateboarding, snowboarding, spending time with his wife, and playing with his golden retriever puppy, Flipflop. No matter where he is, his love for cooking and creating memorable experiences is never far behind.
