The compliments are always appreciated — but what I'm really cooking for is that first-bite moment. The happiness on someone's face when they take that very first taste. That's what keeps me going, every single time.
My cooking is rooted in bold, comforting flavors. I grew up with Nicaraguan roots and a love for Mexican cuisine that runs deep — tacos, nachos, fajitas, taquitos, all of it. My food is the kind that brings people together and sticks with them. I'm not just making a meal. I'm trying to be part of a moment you'll actually remember.
I learned to cook at home, in a kitchen where my parents were the teachers. My father introduced me to sazón completa; my mother showed me the simple joy of a homemade cake from scratch. While my siblings were outside playing, I was in there watching and learning — and I never really stopped.
My professional journey started at The Cheesecake Factory, where one especially busy weekend working mornings and nights back-to-back made everything click. I loved the energy — the clattering pots, the sizzling grill, the music, the rhythm of a full kitchen firing on all cylinders. That feeling never got old. Since then I've cooked in schools, hospitals, family-owned restaurants, and upscale kitchens, and every single one has taught me something new.
Two milestones I'm especially proud of: my first catering event, where a family friend trusted me to bring their vision to life, and launching my own food tent — which was so well received that guests were already asking about the next one before the first had even wrapped.
When I'm off the clock, I'm usually at the gym, dumbbell in hand, or spending time with my white Shiba Inu, who — according to me — loves me the most in the house. My dream culinary trip? Europe, specifically for the coffee.
